Step by Step Method

Step 1

Preheat oven to 350 degrees F.

Step 2

Set oven rack to second-lowest position.

Step 3

Grease a large cookie or baking sheet/s.

Step 4

Place all the cookie dough ingredients in the bowl of a heavy-duty stand mixer; mix for about 2-3 minutes or until well combined, stopping in the middle to scrap down the edges of the bowl.

Step 5

Remove the dough to a flat surface and knead about 30 seconds. Divide dough into 2 even pieces, then roll into 2 logs. Refrigerate the dough for 3 hours. (you can freeze one half of the cookie dough if you want to use it another time).

Step 6

Remove the chilled dough. Spice into about 1/2-inch slices. Place on baking sheet.

Step 7

Bake for about 6 minutes. Allow to cool on baking sheet (cookies will harden further as they cool).
