Creamy Garlic-Parmesan Orzo

  • 170 grams dry orzo pasta (dry, 2 cups)
  • 3 tablespoons butter
  • 1 small yellow onion (finely chopped)
  • 3 garlic cloves, finely minced
  • Cayenne pepper, pinch (optional)
  • 1/2 cup Parmesan cheese, grated
  • 1/4 to 1/3 cup half and half (or whole milk)
  • 2 tablespoons minced fresh parsley, minced
  • Salt and fresh ground black pepper, to taste

  How to Make

Step 1

Cook the orzo according to the package directions; drain well.

Step 2

In a large skillet melt the butter over medium heat; add in the onion and saute until just softened (about 3 minutes). Add in fresh garlic and cayenne; cook 1 minute. Reduce the heat to low and add in the cooked orzo, Parmesan cheese, cream or milk and parsley; toss to heat through.

Step 3

Season with salt and pepper to taste.

I did make slight changes to this to make this gluten free using cooked brown rice and I used canned coconut milk because I was out of cream and this tasted fantastic!!!!

I love easy recipes, and this one hit the mark. I made a half recipe and followed the recipe exactly other than using a mixture of parmesan and feta cheese. Definitely will be making this again.

We really enjoyed this tasty side dish and company worthy in my book. It is so easy to throw together which makes it great for busy times. I made a half recipe and used 2 cloves garlic and at least 3 tbsp half and half. Thanks for sharing!
