Step by Step Method
Step 1
You will need one large skillet and one large saucepan for this recipe.
Step 2
Wash, stem and chop spinach. Dice onion and crush garlic cloves.
Step 3
Heat butter in skillet over medium-high heat and saute onion until soft.
Step 4
Reduce heat to medium, add spinach and garlic, season with salt and pepper, and saute for a couple more minutes. Remove from heat.
Step 5
In saucepan, melt butter over medium heat. Whisk in flour and cook til flour turns golden, but not brown. Whisk in cream, a little at a time. Continue whisking til sauce thickens, then turn heat down to low.
Step 6
Add spinach to saucepan and stir well. If the rest of dinner isn't ready yet, cover and turn off heat.
Step 7
To serve, transfer to a heated casserole dish. To heat dish, place in oven at 170 degrees or fill with boiling water for a few minutes.
