Step by Step Method

Step 1

Place dates, honey, orange rind, cashew spread, LSAS, coconut, cranberries and 1/4 cup pistachios in a food processor and process until well combined and a coarse mixture forms.

Step 2

Finely chop remaining pistachios and place in a small bowl.

Step 3

Press and roll level tablespoons of mixture into balls and then roll in pistachios to lightly coat.

Step 4

Place balls on a plate and refrigerate for 20 minutes or until firm.

Step 5

Store balls in an airtight container in the fridge for up to 1 week.

Smells Like Salad

I am a huge fan of dates so for me this was perfection. I used local honey and barhi dates in addition to medjool. A tasty treat with our English breakfast tea for elevenses during our Thanksgiving school break. *FYI* to other cooks: linseed is flax (seed). Prepared for the ongoing FYC game. Thanks, ImPat!
