Step by Step Method

Step 1

Chop bacon.

Step 2

In a deep soup kettle, saute bacon, celery & onion over medium heat until onion is golden, about 5 minutes.

Step 3

Add potatoes, water and seasonings. Bring to a boil over high heat.

Step 4

Reduce heat and simmer, covered, for 15 minutes or until potatoes are tender.

Step 5

Mash potatoes slightly, leaving about 1/4 of the cubes whole.

Step 6

Remove the bay leaf.

Step 7

Add the milk. worcestershire sauce and parsley and bring to just a boil.

Step 8

Serve hot.

This is a great soup and very easy to make. Having food intolerances this was very easily converted to gluten free by using gf bacon and Worcestershire and dairy free by using coconut milk. Rich and creamy yummyness.
