"This is a recipe my mum and even her mother used to make, as the years went on mum started making these every week for my husband who absolutely loved them and still does. Now my daughter makes them for him. When we were young we knew them as Goofies! Easy and tasty! Any dried mixed fruit can be used, currants, raisins, or even mixed peel. We often put nuts in as well."

Step by Step Method

Step 1

Preheat oven to 180dg c.

Step 2

Cream butter and sugar and add the beaten egg.

Step 3

Add flour, fruit and vanilla.

Step 4

Roll mix into small balls and then roll balls to cover in cornflakes.

Step 5

Put on lined baking tray and put in oven for 15-20 minutes or until Corn Flakes are golden and cookies have spread.

Step 6

Enjoy.

These cookies are excellent in flavor and so very easy to make! The crunch that the corn flakes provide is absolutely genius and gives such a nice layer of flavor. I did refrigerate the dough so as to make it easier to roll. Other than that, I followed that recipe to a T. I also used golden raisins for the fruit. Thank you,Tis, for sharing. Made it for Billboard Tag.

Easy and good! We wanted to bake something but didn't have any all-purpose flour but did have cornflakes and self-rising flour. We used blueberries for the fruit -- which is what we had on hand, but I think raisins or other fruit will work great. We made about 1 1/2 dozen. Thanks for sharing!
