Step by Step Method

Step 1

Egg ... Add the egg, butter, chives, salt, pepper water and seasoning to a coffee cup and use a fork to whisk the mixture very well, not just a quick whisk. Microwave on medium low heat (I use 30%) for 1 minute - remove and whisk again making sure to break up all the egg and whisk really well once again. Repeat on 30% for another minute - again remove and whisk well breaking up the egg. If you want to add cheese, now is the time. Return to the microwave and cook another 30-45 seconds on medium heat (40-50% power). The egg will double in size and be light and fluffy.

Step 2

Serve ... They come out perfect and taste great as is. You can eat them right out of the cup; or top an english muffin, toast or bagel. I love to serve this with toast for a quick morning breakfast. Just cut your toast and add it right to the coffee cup. Breakfast on the go. This also wonderful in a tortilla. Warm the tortilla for a few seconds in the microwave, add the egg, and roll it up.

Step 3

Note: This also works with egg beaters; but you won't get the light fluffy texture; but they still work. And use whatever cheese you prefer. I enjoy cheddar, swiss, gruyere, monterey jack or provolone. Goat or Feta are also really good. ENJOY!

In my 900 watt microwave powered at 30% for 30 seconds did nothing, at 40% for 30 seconds warmed up the mix but once on 50% for 30 seconds we started to cooking and another 30 seconds at 50% finished it off. I used fresh chives, and 2 medium eggs and the rest as per the recipe and with toast was a very enjoyable and filling breakfast.
