Step by Step Method
Step 1
Vinaigrette ... Add the lime juice and mustard to a small bowl and whisk well. The mustard will emulsify the lime juice, and create a creamy dressing. Season lightly with salt and pepper to taste; only add a pinch of sugar if the mango is NOT very sweet.
Step 2
Salad ... Add the hearts of palm, mango and red onion to a bowl, along with a little of the vinaigrette and toss.
Step 3
Finish and Serve ... Plate a lettuce leaf on each plate and top with a scoop of the salad. Drizzle with a little more vinaigrette, and fresh ground black pepper. ENJOY!
