In a bowl whisk together 1/2 cup cream, egg, vanilla, and brown sugar until combined well. In another bowl stir together flour, cinnamon, salt, baking powder, and baking soda and blend in butter until mixture resembles coarse meal. Stir in raisins and cream mixture with a fork until mixture just forms a sticky but manageable dough. On a lightly floured surface knead dough gently and cut into 6 wedges. - Be sure to use cold butter for the scones, as this will help them to rise and stay flaky.
- If you don't have cake flour, you can use all-purpose flour instead.
- Substitute almond milk for heavy cream - This substitution will make the scones vegan friendly and will reduce the amount of saturated fat and calories.
- Substitute coconut sugar for light brown sugar - This substitution will add a subtle coconut flavor to the scones and it is a healthier alternative to refined sugars.
Coconut Scones Replace the raisins with 1/2 cup of shredded coconut and add 1/2 teaspoon of almond extract to the wet ingredients.
Apple Compote - A warm and sweet compote made with apples, cinnamon, and brown sugar, this dish is the perfect accompaniment to the Cinnamon Raisin Cream Scones. The compote adds a touch of sweetness and complements the cinnamon and raisin flavors in the scones.
Honey Butter: This simple honey butter is the perfect complement to the Apple Compote and Cinnamon Raisin Cream Scones. It adds a subtle sweetness and creamy texture that pairs deliciously with the apples and cinnamon flavors of the other dishes.
