Step by Step Method

Step 1

Preheat oven to 350.

Step 2

Grease and flour 2 9x5" loaf pans.

Step 3

Combine flour, soda, sugar, salt, and nuts in mixing bowl, and blend by hand.

Step 4

Add remaining ingredients, and mix well.

Step 5

Bake at 350, for 1 hour, in 2 greased and floured 9x5" loaf pans.

I was delighted when I saw this recipe because I had a recipe much like that I used make often in the past but of which I had lost. This bread is a touch of heaven and delightful as can be in taste. Because I had a couple of mangoes in the freezer that I wanted to use up, I decided to use them because of it's "tropical" nature. I should have used 1 because it was a little bit too much where it made the bread a bit wet. To pump up the flavor of the mango I added extra vanilla and some coconut extract. The flavor was "FAB". I had every intention of using banana as well for another batch, but I simply ran out of time, but I will surely make it again with banana. Thank you Linda for sharing a great one!

The best dessert bread I have ever had. Coconut, nuts, bananas and pineapple go so good together and the end result is a fantastic loaf of moist and very tasty bread. I served it with cream cheese, but it is just as good all by itself!

Very moist and what a delicious flavor. I have made it a few times and shared it with my neighbor down the street. She calls me weekly to see if I have made another one. I think she likes it as much as we do. I have passed this on to all my friends at work. We will enjoy this for years to come!
