"I love this recipe! I'm looking at the pic of it & I can almost smell the aroma, feel its warmth & taste the goodness. It's plain & simple comfort food. "Chorizo on Horseback" is a breakfast or sandwich meal in the Azores. Found @ portuguesedinerdotcom/ (aka Tia Maria's Blog for the Portuguese Foodie). Maria Dias & her daughter (Lisa) are co-authors of TASTE PORTUGAL, 101 EASY PORTUGUESE RECIPES (Vol 1). Maria says it's delicious, her husband's favorite breakfast/sandwich & the "perfect easy dish for breakfast, lunch or dinner"! Times were not given, so were estimated by me. ENJOY!"

Step by Step Method

Step 1

In a med skillet on med heat, place 2 tbsp of olive oil & heat until hot, but not smoky. Add all 4 of the chorizo sausage halves & cook until golden brown & slightly crispy on both sides.

Step 2

Remove from pan when done & add the onions. Cook onions on med heat until golden brown, stirring often. If the pan gets too hot, lower the heat.

Step 3

Add the wine & cook for about 2 min, stirring often. Remove the onions from heat & set aside while you cook the eggs.

Step 4

Add the remaining 2 tablespoons of olive oil to a non-stick skillet on med heat. When the oil is hot but not smoky, add the eggs & fry them until the edges are crispy. Lower the heat as necessary. Remove the pan from any heat source.

Step 5

TO BUILD THE BREAKFAST SANDWICH: Put both halves of a chorizo sausage link on the bottom of ea of the 2 rolls. Divide the browned onions between the 2 sandwiches & gently slide an egg onto ea sandwich. Cover w/the other half of each roll & watch them vanish.

TwisSis you will never recognize this as your recipe . Let me explain - The chorizo sausage I had was one large one so I sliced it. Next I had it in my mind that I was making an omelet this AM so I whizzed up the egg before rereading the recipe. Whoops now I reread the recipe and saw they were supposed to be fried eggs Mmmm. Instead of a bun I used Sunflower Bread toast. See what I mean. My sister in law's family is from the Azores, and having met (a dozen of) them, I have a special affinity for the culture, which drew me to this recipe. It is an interesting breakfast sandwich that is very hearty, an easy fix, and could certainly be eaten at any meal.

This sandwich was delicious. I really loved it. I used a croissant as my base... and made as written, but I used diced chorizo, they worked great in this recipe. Thank you for sharing a recipe that I will enjoy again and again. made for Best of 2016

Portuguese chourico is one of my favorite sausages. If you can find a Portuguese butcher shop or market you're in luck. I grew up on this type of food and the taste that this sandwich imparts is FABULOUS. The egg fried in oil and placed on top is of typical Portuguese style cooking and I loved everything about it. On it's own or alongside a soup or salad it's always good. Thank you twissis for sharing!

Oh so yummy and oh so filling. The fried egg with the crispy edges takes back to my childhood. I could not get Spanish Chorizo so used Portuguese Sausage which worked out perfectly. Thanks for the post.
