"These are a fantastic after dinner treat. You could also wrap them in cellophane to give as gifts. These are best made a day ahead and last refrigerated and covered for up to 1 week. I have added drying time for cooking time."

Step by Step Method

Step 1

Quarter the oranges, peel away the skin in whole quarters, including the white pith. Cut orange skins into strips 1cm wide.

Step 2

Drop the strips into a medium pan of boiling water, return to boil then drain the skins and repeat the boiling process and drain twice more.

Step 3

Combine water and sugar in a medium pan, stir over heat, without boiling until the sugar is dissolved. Add the orange strips, bring to boil, then simmer, uncovered for 7 minutes or until strips become translucent. Stir gently from

Time to time whilst simmering.

Step 5

Using 2 forks or tongs, remove the orange strips from the pan to a wire rack over a tray. Allow the strips to dry overnight.

THE NEXT DAY


Step 6

You will need a covered tray with foil or waxed paper ~ Melt the chocolate in a small heatproof bowl over simmering water (I use the microwave) Dip half of each orange strip into the melted chocolate, place each one on the covered tray.

Stand, uncovered until completely set.
