"This little pie is perfect for two people. Grab two forks and share a piece of delicious pie, or cut it into tiny cute pie pieces. Kids love the little pie pieces. :) I always buy those little foil pot pie pans to make small pies. They can be bought at most discount or grocery stores. Dust the pan generously with flour before shaping in your crust. Make your own pie crust or buy pre-made. You can leave your crust in the pan or remove it after it has cooled. I make many different pies using these little tins, especially ones I can freeze like fruit pies and pot pies. Prep time does not include preparing piecrust or cooling."

Step by Step Method

Step 1

In a small saucepan, whisk together the cold milk and egg yolk until completely blended.

Step 2

Whisk in the cornstarch and blend until well mixed.

Step 3

Add in the sugar and mix again.

Step 4

Turn heat on to medium high and cook; whisking constantly, until mixture begins to thicken and boil. (This takes about approximately 5-6 minutes).

Step 5

Remove from heat and stir in the chocolate and vanilla. Stir until chocolate is completely melted.

Step 6

Pour immediately into the cooled pie shell; cool at room temperature for about an hour.

Step 7

Cover pie with whipped cream and grated chocolate, if desired, and then chill pie thoroughly.
