Step by Step Method
Step 1
Pat cherries with paper towels to remove excess moisture and set aside.
Step 2
In a large bowl, cream butter and brown sugar until light and fluffy.
Step 3
Beat in cherry juice and vanilla.
Step 4
Combine flour and salt; gradually add to creamed mixture and mix well.
Step 5
Cover and refrigerate for 1 hour or until dough is easy to handle.
Step 6
Insert a chocolate chip into each maraschino cherry.
Step 7
Wrap a tablespoon of dough around each cherry.
Step 8
Place 1 in. apart on ungreased baking sheets.
Step 9
Bake at 350° for 15-17 minutes or until set and edges are lightly browned. Remove to wire racks to cool.
Step 10
In a small bowl, melt chocolate chips and shortening, stir till smooth
Step 11
Dip tops of cookies in melted chocolate and let stand till set
