"This is a cake recipe from the late Mietta O'Donnell. Mietta was a Melbourne-based Australian with Italian background restaurateur, chef and food writer. Her chocolate cake and recipes as still so well known here in Victoria, Australia. I made it many years ago, and lost the recipe ~ Only to here it being broadcast again on radio just a few months back, so am posting it here for all to enjoy. Ice this cake with your favourite icing."

Step by Step Method

Step 1

Heat oven to moderate.

Step 2

Grease and flour a square baking tin, approx 17x7cm

Step 3

Beat butter and sugar together till white add the dissolved chocolate and the egg yolks, then the flour and rice.

Step 4

If mixture is too thick, add a little milk.

Step 5

Beat egg whites till stiff and then fold through carefully.

Step 6

Tip into the tin and bake in moderate oven for 40 minutes.

Step 7

Let the cake rest in the tin before turning out.

Step 8

Ice with your favourite icing.
