"I admit up front that this recipe is atypical for me. I usually enter smaller recipes that can be enlarged as needed vs down-sized as needed. This recipe is best for an adult crowd as potluck, salad bar, buffet, picnic or patio party. It has a large list of ingredients (I even added a couple), so treat them as optional personal preference choices. Prep time & # of servings were estimated, but most of the prep can be done ahead for last moment assembly. I clipped the recipe from a calendar, but forgot to note the source. Prove you're not afraid of the ingredient list & give it a try. I doubt you'll be sorry. (Pls read note under prep steps Re # of servings) Enjoy!"

  • Choose ripe strawberries and avocados for the best flavor in your salad.
  • For a smokier flavor, add more chipotle chili powder to the dressing.

  • Substitute the buttermilk for plain yogurt: This substitution will lighten up the dressing, making it a better option for those who are looking for a healthier option. The plain yogurt will also add a slight tanginess that will complement the other flavors in the dressing.
  • Substitute the bacon for tempeh: This substitution will make the salad vegetarian-friendly, while still providing a hearty and flavorful addition to the dish. The tempeh will add a nutty flavor that will be a great contrast to the other ingredients in the salad.

Mexican Chipotle Ranch Salad Replace the corn, strawberries, raspberries, olives, avocado, mushrooms, red pepper, cucumber, jicama, bacon, tomatillos, green onion, pepitas and cilantro with 1 cup cooked black beans, 1 cup cooked corn, 1/2 cup diced red onion, 1/2 cup diced jalapeno peppers, 1/2 cup diced tomatoes, 1/2 cup diced cilantro, 1/2 cup diced cotija cheese, and 1/2 cup crushed tortilla chips. Replace the salad greens with 8 cups of shredded romaine lettuce. Serve with lime wedges for squeezing.

Grilled Asparagus: Grilled asparagus is the perfect side dish to complement the Chipotle Ranch Salad. The smoky flavor of the asparagus pairs well with the bold flavors of the ranch dressing, and the crunchy texture provides a nice contrast to the creamy salad. Plus, it's quick and easy to make on the grill, making it a great addition to any crowd occasion.

Roasted Sweet Potatoes: Roasted sweet potatoes are a delicious and nutritious side dish to serve with the Chipotle Ranch Salad. The sweet potatoes are lightly seasoned with olive oil, garlic, and herbs, and then roasted until they are golden brown and tender.
