"A good side dish for fall. I use chipotle, but regular chili powder could be used. Amount of chili used can be adjusted to taste. "

Step by Step Method

Step 1

Cook the sweet potatoes in boiling water or roast in the oven. Melt the butter and add the chili powder, juice of the lime, and the salt.

Step 2

Add the sweet potatoes and mash together with the other ingredients. Taste and adjust salt and lime if desired.

This recipe has great flavour. The chipotle and lime compliment and add to the natural flavour of the sweet potato. I cut the recipe back to 4 servings (One medium sweet potato) and still used 1 teaspoon of chipotle. We loved it. What I also liked was that I could prepare the recipe in the morning and reheated it for dinner. This recipe goes right into my vegetable recipe book.
