Chinese 5-Spice Oatmeal Nut Cookies
"Chinese 5-Spice gives these chewy, nutty oatmeal cookies a very unique flavor. The nuts are essential to the recipe, acting as part of the "flour," so they can't be left out - however you may substitute any nut that you prefer. I have made these cookies for years and they are one of my daughter's favorite oatmeal cookies. These will not taste anything like a typical oatmeal cookie; Asian inspired, not authentic Chinese."

Step by Step Method
Step 1
Preheat oven to 350°F.
Step 2
In a large bowl, mix together the oats, flour, ground nuts, 5-spice powder, cinnamon, baking powder, and salt.
Step 3
In another bowl, using an electric mixer, cream the butter and both sugars until light and smooth; next add eggs and vanilla to the butter mixture and beat well.
Step 4
Add flour mixture to the butter mixture and beat until blended.
Step 5
Drop by mounded tablespoonfuls onto lightly greased cookie sheets(I use a mini meatball scoop);these do spread some while baking, so be sure to leave a big enough space between each, about a 1 1/2" gap between each mound of batter.
Step 6
Bake at 350° for 12-15 minutes or until done to your liking. Cool on wire racks.
Step 7
Makes approximately 3 dozen.
