Step by Step Method

Step 1

Heat oil in a large saucepan medium-high heat. Add onions and garlic and stir for 4 minutes. Add juice from can of tomatoes (reserve tomatoes). Sprinkle with sugar and seasonings. Stir often, uncovered until most of the liquid has evaporated, about 10-15 minutes.

Step 2

When there is very little liquid left, stir in green pepper and diced tomatoes. Reduce heat to medium and boil gently, uncovered and stirring often, to blend flavours and thicken about 20 minutes. Add salt and pepper. Serve right away or cover and refrigerate up to 5 days.

Love this sauce! Inially made it up to spoon on sausages. This morning I topped off my scrambled eggs, have to say I was impressed! Enjoyed so much that along with making it for sausages and eggs I will make it with a can of black beans the next time my vegetarian friend joins me for lunch.
