Step by Step Method
Step 1
Heat oil in a large saucepan medium-high heat. Add onions and garlic and stir for 4 minutes. Add juice from can of tomatoes (reserve tomatoes). Sprinkle with sugar and seasonings. Stir often, uncovered until most of the liquid has evaporated, about 10-15 minutes.
Step 2
When there is very little liquid left, stir in green pepper and diced tomatoes. Reduce heat to medium and boil gently, uncovered and stirring often, to blend flavours and thicken about 20 minutes. Add salt and pepper. Serve right away or cover and refrigerate up to 5 days.
