Step by Step Method

Step 1

Combine soy, sugar, honey and tomato sauce in a bowl.

Step 2

Place chicken wings in a large snap lock bag and add the marinade, seal bag and shake to coat the wings and then marinate in refrigerator for at 2 hours or preferably overnight.

Step 3

Combine butter, chilli, lime rind, lime juice and chives in a bowl and season with salt and pepper.

Step 4

Spoon the mixture onto a sheet of baking paper and form into a 10cm log, roll up firmly twisting the paper ends to secure and refrigerate for 30 minutes or until firm.

Step 5

Preheat oven to 200C.

Step 6

Line a baking tray with baking paper.

Step 7

Remove wings from the marinade and place on prepared tray and bake, basting every 15 minutes for 45 minutes or until golden and cooked through.

Step 8

Top with slices of chilli, chive and lime butter and serve with lime wedges.

I ended up making this with skinless thighs so marinated the chicken overnight. To bake I placed the chicken on a wire rack above a sheet pan to make basting easier. I turned the chicken several times as well. The butter is wonderful. We had enough to melt on top of the rice too. Served with caribbean rice, green beans, and a 3 cup fruit salad.
