I made this for my mom's birthday dinner and we fell in love with it at first bite. What a great choice it was to make for her. She couldn't have been happier. The chicken was really delicious and it really wowed us! I made some roasted potato chunks with Sherry, onions and rosemary sprinkled over the tops with a little oil. They came out great too and it completed the dinner perfectly. We had bacon wrapped asparagus for the veggie which was a big plus to the meal. My mom has already requested this for her birthday dinner again next year!
