"This is a bit unusual, but we really like the flavors. The chicken needs to marinate overnight, or it can be made ahead of time and frozen in the marinade, then just defrost overnight in the fridge. I serve this over couscous and spoon the broth over the top."

Step by Step Method

Step 1

In a resealable bag, combine garlic, prunes, olives, capers, olive oil, vinegar, wine, bay leaf, oregano, salt and pepper, and brown sugar and mix well.

Step 2

Add chicken breasts and marinate in refrigerator overnight (or freeze at this point).

Step 3

To cook: preheat oven to 350 degrees.

Step 4

Pour contents of bag into baking dish and bake, spooning the broth over the chicken several times for 30 minutes, until chicken is cooked through.

A great blend of flavors that come together really well to make for a delicious chicken dish. I served it over Jasmine rice, which helped to soak up the juices, resulting in delicious rice too!
