"Make sure you oil your grill well as these will stick and fall apart. I serve these with garlic bread topped with cheese and bacon and lay them on romaine lettuce. These can be made in the oven also."

Step by Step Method

Step 1

If using wooden skewers, soak in water for about an hour..

Step 2

Mix all ingredients together.

Step 3

Form into 1 inch balls.

Step 4

Skewer and grill until cooked through.

Step 5

Serve on Romaine leaves and drizzle with more dressing.

I don't BBQ but really liked the sound of this recipe so I followed the recipe, made 12 meat balls and baked them 375f for 25 minutes. They are great, lovely texture. From 1 pound of ground chicken I wil get 4 tasty meals - not bad!

Delicious! The meatbaals were tender and very flavorful. I did have trouble grilling the meatballs. The meatballs fell off the skewers plus I had major difficulty turning them. Next time I make them I will omit the skewers and either grill them separately or just bake them in the oven. Another idea is to make hamburger patties as I'm sure they would be easier to grill. I served them with romaine lettuce as suggested and leftover stuffing. Made for Billboard tag.
