Chewy Gluten Free Banana Biscuits

"This is from the Gluten Free Club. The directions are for drop biscuits, but I'll bet they would work for cut out ones too. The original calls for 1 C gluten free flour with a bit of chick pea flour thrown in. If you use my Gluten Free Flour Blend, you won't need the chickpea flour, as there is an almond or bean flour (your choice) already in it. I used 3 T brown sugar. It holds together nicely and has a little bit of a chewy texture. Nice mouth feel. :) I might try adding some melted butter instead of the milk next time. I forgot the xanthan gum and it still turned out great! "

Step by Step Method
Step 1
Combine together all the ingredients, except for the bananas and water, and mix well.
Step 2
Then add in the ripe, well-mashed bananas and mix well. Add a splash or two of water or milk if it doesn't combine well (too dry).
Step 3
Drop onto a greased (or parchment paper lined) baking sheet and bake for 12 minutes or until golden brown.
