"If you haven't tried canning, I highly suggest you do so. I make preserves when fruit is in season; the jars are decorated and they make wonderful Holiday gifts. There are many sites ( and books) with canning instructions. Please consult before starting this. Yields 3 pints"

Step by Step Method

Step 1

To prepare fruit; sort and wash, remove pits, and cut into pieces - measure until you have 4 (or a bit more) cups.

Step 2

Place cherries into a large pot. Add pectin and mix well.

Step 3

Turn heat on high and , stirring constantly, bring quickly to a full boil.

Step 4

Add sugar, continue stirring until a full boil is reached.

Step 5

Boil hard for 1 minute, stirring constantly.

Step 6

Remove the foam from the top with a spoon.

Step 7

Fill and seal the containers.

Step 8

Process 10 minutes in a boiling water bath ( please use canning instructions).
