Step by Step Method
Step 1
Preheat oven to 350 degrees.
Step 2
Butter a 2-3 quart casserole dish.
Step 3
Steam cauliflower florets until tender (do not allow to get really soft and mushy).
Step 4
While cauliflower steams, cream together 6 oz of the shredded cheddar, 6 oz of the Monterey Jack, softened cream cheese and whipping cream and garlic powder.
Step 5
Stir in sliced green onions, chopped bacon, and garlic powder. Set aside.
Step 6
Drain steamed cauliflower VERY WELL. Add to cheese mixture then stir together.
Step 7
Taste for seasoning, and add as necessary.
Step 8
Pour into a casserole dish and sprinkle on remaining cheddar and Monterey Jack cheese.
Step 9
Cover dish with foil and bake for 25 minutes; remove foil and continue to bake until cheese is brown and bubbly.
