"One more recipe I re-posted from another site.ORIGINAL DESCRIPTION: I found this recipe in TOH's 2004 "Best of Country Cooking". It was submitted by Dolores Nemec. I changed a couple of things to make this more for mine and my SO's personal tastes. The cooking time includes both baked times, and the prep time includes the cooling time before slicing the top off of potatoes.The first baking time for the potatoes is 1 hour.Posted to "ZAAZ" on 10/28/13. Step by Step Method

Step 1

Preheat oven to 375 degrees,then bake potatoes for 1 hour or until done.

Step 2

When cool enough to handle,cut a thin slice off the top and scoop out pulp leaving a thin shell.

Step 3

In a medium size bowl, mix together milk, egg, potato, mayonnaise, and 1/2 cup of cheese, salt, and pepper.

Step 4

Divide evenly into potato shells.

Step 5

Make a little " well " in potato mixture, and fill with remaining cheese and bake for 20 minutes at 375 degrees.

Step 6

Then divide bacon over cheese and bake for another 10 minutes,or until heated through.

This made a fantastic lunch which I thoroughly enjoyed using a Carisma potato which is low Gi though I did have an oops moment and put the bacon in with the mashed potato but it was still a wonderful eat, thank you Chef shapeweaver made for For Your Consideration at FF&FF>
