"I have made this recipe over a few years now, especially over summer. The flavours of sweet caramelised pineapple go with any summer dish as the perfect side, especially if sweetness is needed. Or just serve on it's own with some vanilla ice cream ....delicious! I found this recipe in a food idea's magazine years ago and been making it ever since."

Step by Step Method

Step 1

Preheat barbecue chargrill on medium-high.

Step 2

Cut pineapple crossways, and then into 1cm-thick slices. Place in a bowl.

Step 3

Add sugar to pineapple. Toss to coat. Cook pineapple for 1 minute each side or until caramelised.

Step 4

Serve.
