"This delicious dessert is originally from Prep For Success, and it is from the Cayman Islands. I tried it and loved it. This is so delicious, and as you can see by the ingredients it is not your run of the mill dessert. It is delicious served with Vanilla ice cream on top, and is enjoyed very much at my house. My boyfriend pigged out while I was gone and ate all but one piece, so I will be making it again, just so I can get my share! "

Step by Step Method

Step 1

Preheat oven to 350 degrees.

Step 2

In a large bowl, combine dry ingredients then very slowly add coconut milk, mixing as it is added.

Step 3

Pour into a greased or sprayed 8 inch baking dish, and bake for 1 1/2 hours. Center will still be jiggly when done.

Step 4

Serve with Vanilla ice cream on top.

The lovely taste of coconut with the creaminess of custard with a few other flavors mixed in makes this a delicious dessert and something so different for us. We love it with whip cream thick all over the top of it. Pure dessert heaven!

Something different to make, and us southern folk know if it has cornmeal in it, it has to be good! It was delicious with ice cream on top.
