Carrots Vichy

"This dish is named after the town by the same name in France. Lovely side dish that is quick and easy to put together. You can make this with parsnips. The cooking time is variable as to the size you cut the carrots. Just cook them until they are the way you like them."

mmm a delicious way with carrots and so easy to put together. I used splenda in place of the sugar and garnished with snipped chives. We loved them, made for the "France Tour" Summer vacation game. will be making these again for sure..

  • 2 cups carrots, sliced (peeled, or parsnips)
  • 1/2 cup water (boiling)
  • 2 tablespoon butter
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon salt
  • 1 teaspoon lemon juice
  • Chopped chives or parsley, for garnish

  How to Make
 
 

Step 1

Place all ingredients in saucepan except the chives/parsley.

Step 2

Cook the carrots or parsnips over medium heat until the water evaporates.

Step 3

Permit them to brown in the butter.

Step 4

Serve them with a sprinkling of chives or parsley.

Fond as we all are of carrots has me watch for new recipes to add variety to our meals. Carrots Vichy easy to make, looks and tastes great- makes for great presentation making it a real winner at our house! Added to our Family Cookbook right along side our family favourite!

These are incredibly tasty, and really easy! I did take a couple of liberties, due to my own restrictions. I used whole baby carrots instead of sliced carrots, and quite honestly forgot I was going to chop chives for garnish so we went without. Since I was using whole carrots, I covered them for 15 minutes, then uncovered to let the liquid completely evaporate. I also didn't brown the carrots, because the carrots were done and the glaze was perfect. This will definitely be making a regular appearance on my table!

Very easy tasty recipe. I had a lone parsnip so I added it to the carrots. Be carful that you stir them frequently at the last browning or the can get a bit burned. This recipe will be made again for sure Thanks luvcookn for posting this recipe
