Step by Step Method

Step 1

In medium saucepan in boiling salted water boil carrots until just tender about 2-3 minutes(do not overcook) drain and dry.

Step 2

In large skillet over medium-low heat add vegetable oil, add sliced onions simmer stirring occasionally until onions are soft and carmelized.

Step 3

Add matchstickled carrots, stir in honey and orange juice stirring until nicley glazed.

We loved these carrots made this way! The honey and orange juice go really well and I love the slight snap of the carrots. The only thing that I did different was add a bit of salt and black pepper. It paired well with our Corned Beef dinner tonight. Thank you Gerry for sharing. Made it for Billboard Tag.

Made as written for the Billboard Tag Game, mainly since we love both main ingredients & I had a bit of the orange sauce I to use from your roast duck recipe. It's an easy-fix & well-flavored, but we found it a bit on the "too sweet" side, so I'll reduce the honey to 1 tbsp for its encore. It was served w/lasagna, garlic bread & cucumber salad. A plated pic will post later today. Thx for sharing this recipe w/us.

I didn't make this to go over squash. Just had it as a side with prime rib roast and double stuffed baked potatoes on the grill. I plan to make them over squash for Thanksgiving though. Yes, they are that good!
