Step by Step Method

Step 1

Combine brown sugar, corn syrup and butter in a saucepan. Bring to boil over medium heat, stirring constantly.

Step 2

Cook, without mixing, until mixture reaches 238 degrees on candy thermometer (softball stage).

Step 3

Remove from heat and let cool to lukewarm.

Step 4

Blend in cream and vanilla.

Step 5

Store refrigerated in covered jar.

Oh YUM!!!! This is just what I wanted!!! Totally satisfied my sweet tooth. Easy to make too! I enjoyed it warm over vanilla ice cream with toffee pieces. DELICIOUS! I'm going to be enjoying this by the spoonful. This tastes more like hot caramel to me, but that is usually made with white sugar that is browned, whereas butterscotch is made with brown sugar and butter. Thanks Bea! Made for the "Pick Me!" recipe tag game.
