Step by Step Method

Step 1

Preheat oven to 350f degrees. Veggie spray a 2 litre casserole.

Step 2

Combine squash,salt and pepper, cumin, anise, and brown sugar, apple if using, in casserole. Sprinkle melted butter and lemon juice and zest over, Mix well.

Step 3

Bake uncovered on centre oven rack at 350f degrees for about 40 minutes or until squash is tender.

This recipe was part of our Thanksgiving meal and it was a nice change from our regular butternut squash rotation. We really liked the spices in it, but I did add additional brown sugar as our butternut squash was not all that sweet. This recipe will be made again. This has to be one of the best Butternut Squash recipes I've ever tasted! The ingredients come together to make one of the most flavourful Butternut Casseroles ever! Used the apple which was optional,loved the end result. Good to be reminded as to how much I enjoy anise. Enough left for lunch tommorow! Thank you for another of your recipes that havae been added to my cookbook.
