Step by Step Method
Step 1
Soak beans in cold water at least 8 hours, or overnight.
Step 2
Drain. Add fresh water to cover. Bring to a boil, reduce heat, and simmer for 1 1/2 hours, or until tender. Drain.
Step 3
Heat oil in a saucepan.
Step 4
Add onions and saute 10 minutes, stirring frequently.
Step 5
Add beans, paprika, salt, thyme and vinegar.
Step 6
Cook over low heat for 15 minutes, stirring occasionally.
Step 7
Serve hot or cold.
