Buffalo Chicken Party Or Dinner Subs
"These are so easy to make - and one of my go to, QUICK, party foods because you can put them together in a flash. Now, I make these for parties; but these are also perfect for a family of 4 for diner. These are easy, inexpensive and delicious. It has all the flavor of chicken wings ... the famous wing sauce, chicken, carrots, greens, blue cheese, and celery; all served on toasted bread. And, just because I like it; I add a little cheese. Now, if you don't want to make 1 big sub; just make individual ones, or even mini ones or sliders, for appetizers. The bread or rolls you choose doesn't change the recipe - just make sure to use a french bread or hoagie type or roll. And, I said quick and easy ... so take advantage of some help from the store. A store bought rotisserie chicken, bottled blue cheese, pre-shredded carrots, and sliced cheese from the deli. You don't have to do this, but it does make life easier. If you like, make it all from scratch - it is still a great recipe either way."

Step by Step Method
Step 1
Dressing ... Add the blue cheese dressing, sour cream, and celery in a small bowl or measuring cup and mix to well. Refrigerate until ready to use. You can always make your own blue cheese dressing if you want. This is just the easy way.
Step 2
Salad ... Cut the lettuce into wedges and thin slice or shred. Add to a bowl along with the carrots and onions and toss to combine. Cover and refrigerate until ready to use.
Step 3
Sauce ... Add the butter, hot sauce, garlic powder and worcestershire to a measuring cup, mix, and microwave 2-3 minutes on medium heat until heated through and the butter has completely melted. One half (1/2) will be used for the chicken, and 1/2 will be used to brush on the rolls.
Step 4
Chicken ... Shred the chicken using a fork and add to a small pot. Add half or a bit more of the sauce, and mix to combine. Bring to medium heat and cook 4-5 minutes until the chicken and sauce are warm.
Step 5
Bread ... Whether you use a 36" long roll, or 4 individual rolls, it doesn't matter - it is the same method. Cut the rolls in half lengthwise, then lightly brush the melted (butter hot sauce) mix on the inside and outside of the rolls. Add to a sheet plan lined with parchment paper or foil, and bake in a 400 degree preheated oven (middle shelf) for 5-7 minutes until golden brown on each side. The sauce will help the roll to brown, and crisp up.
Step 6
Sandwich ... Add the chicken to the bottom of the toasted roll, top with the cheese, and put under the broiler for just a minute to melt the cheese. Then, top with the lettuce carrot onion salad, and the dressing. Top with the top roll, and secure with tooth pics before slicing.
Step 7
Serve and ENJOY! Slice and serve with your favorites. I love fries, onion rings, chips, pickles, etc. As I said, this makes a great party food, tailgate, game day; but, also great for a family - lunch or dinner. I have made this for friends with a bowl of soup and fries for a nice relaxing dinner. Remember, you don't have to entertain with fancy food - sometimes soup and sandwiches are just the ticket.
