"I came up with this one night trying to mock the flavour of buffalo chicken wings and blue cheese dip, with what I had on hand in the refrigerator and in the pantry. I was quite pleased with how it turned out, as was the bunch of guys DH had over to watch Hockey Night in Canada. This can also be made with fresh chicken pieces for those who do not like canned chicken. For those of you who don't have access to Frank's RedHot Sauce, I do have a copycat recipe for it #recipe13676 ."

Step by Step Method

Step 1

Microwave cream cheese for 30 seconds, just to soften.

Step 2

Mix in remaining ingredients, except for chicken, return to microwave until melted, about 1 ½ minute. This varies from one microwave to another, so try 20 second intervals after the initial melt, stirring after each interval.

Step 3

Stir in chicken and mash together with fork.

Step 4

Serve warm with tortilla chips or pita chips.

When I saw the ingredients for this dip, I knew I had to try it, and I'm glad I did! Took this to a Girl's Night and it was a hit. We ate it with crackers, Fritos, pita chips, celery... heck, some of us were just eating it with a spoon. Delicious!
