"Based on a recipe I got off a flyer at my local Farmers Market - I get so many great recipes there. They usually try to highlight seasonal ingredients. This is an excellent side dish. I added a bit more flavor; and changed from feta to goat cheese. It is really delicious; and not difficult to prepare. Great for a potluck, entertaining, or a weekend dinner; but, it is also a very nice vegetarian option."

Step by Step Method

Step 1

Rice ... Cook the rice according to package directions. I prefer to cook the rice in vegetable broth, but it isn't necessary. Once the rice is cooked, remove from the heat and set to the side as you prepare the vegetables.

Step 2

Vegetables ... In a large saute pan, add the olive oil and bring to medium heat. Then add the onions, garlic, swiss chard, mushrooms, and red pepper flakes and saute on medium heat, stirring often. Add a little water, 1/4 cup; and simmer for 5 minutes until all the vegetables are tender. The water will prevent the vegetables from browning. Once the vegetables are tender remove from the heat to cool a bit.

Step 3

Eggs ... Add the eggs, thyme, oregano, salt, and pepper to a measuring cup or small bowl and mix to combine.

Step 4

Gratin ... Add the egg mixture and the goat cheese to the rice, which has slightly cooled; and mix. Then add the vegetables and mix everything together.

Step 5

Casserole and Bake ... Butter a casserole dish, then add the rice and vegetable mixture to the dish. Top with the panko bread crumbs and parmesan cheese. Bake in a 375 degree oven, middle shelf, uncovered for 30 minutes until the top is golden brown and bubbly.

Step 6

Serve and ENJOY! ... Perfect for a meatless meal, or enjoy as a side dish. It is also perfect for potlucks, BBQ, and entertaining. And, take advantage of your farmers market with fresh chard, farm eggs, and a local goat cheese. It is a REALLY delicious side dish!
