Step by Step Method

Step 1

Prepare rice as directed on box using broth of your choice.

Step 2

Meanwhile over medium-high heat, heat olive oil and add onion. Saute for 3 minutes, stirring often.

Step 3

Add broccoli and cover for 3 minutes, stirring occasionally.

Step 4

Add mushrooms and remaining ingredients to pan and saute until mushrooms release their juices, approximately 5 minutes.

Step 5

Serve over brown rice.

very tasty, easy and quick, we loved the flavour and the combination of mushrooms and broccoli. I will be making this again, nice way to serve broccoli. My veggie broth was very dark , so it made the brown rice "very" brown and quite delicious, I used the rice also as a base for the cod i served, very nice meal.  My veggies looked a wee bit dry when i added the broccoli and mushrooms, so i added about a quarter cup of water before i put the lid on to steam them a bit, the broccoli came out perfect , still bright green and crisp.

Engrossed

Yummy! We loved this simple healthy way to eat our veggies! I used leftover brown rice that I fried in a little bit in bacon grease 'shock'. I made the veggies as directed but used some garlic salt and 3 garlic cloves...we love our garlic! Freddy Cat says thanks for the veggies! Made for the Billboard recipe tag game.
