  • 1 filet (4 ounce) salmon
  • 1/2 teaspoon oregano, ground
  • 2 tablespoons olive oil
  • 1 cup zucchini, sliced
  • 1 cup tomatoes, chopped
  • 1 clove garlic
  • 1 tablespoon basil, chopped (fresh)
  • Salt and pepper, as needed

Step 1

Preheat broiler to high heat.

Step 2

Season the salmon with salt and pepper and sprinkle with the oregano.

Step 3

Broil for 4-5 minutes per side until flakes easily with a fork.

Step 4

While fish is cooking, heat the oil in a skillet over medium heat.

Step 5

Add the zucchini and cook until soft.

Step 6

Stir in the tomatoes and garlic then season with salt and pepper.

Step 7

Cook until heated through then stir in the basil.

Step 8

Serve with the fish.
