Breakfast Tater Tot Hotdish
"I was just using what ingredients I had on hand and came up with a keeper of a recipe! You can easily add other ingredients such as mushrooms, diced tomatoes, etc...Please feel free to add your own favorite things in an omelette. This could even serve as a clean out the refrigerator dish, as veggies would go good with this. "
- 1 pound bacon or breakfast sausage
- 1 onion, diced
- 1/2 bell pepper, diced
- 1 teaspoon olive oil
- 1 (32 ounce) package frozen tater tots
- 10 large eggs
- 3/4 cup milk
- 2 cups cheddar cheese, shredded or your favorite cheese mix
- 10 to 15 slices jarred jalepeno's
- Salt and pepper to taste
What You Will Need
No special items needed.
Step 1
Cut bacon into bite size pieces and fry until crisp. If using the sausage, fry until done. Drain meat.
Step 2
Saute onion and bell pepper in olive oil until tender. Mix with the cooked meat.
Step 3
Spray a 9x13 pan with oil and lay meat and onions and peppers on the bottom. Layer tater tots on top of the meat.
Step 4
Mix eggs, milk, salt and pepper, jalepenos and cheese together. Pour mixture evenly over the top of the tater tots.
Step 5
Bake at 400° for 40 minutes or until browned nicely.
