"The avocado binge rolls on - This recipe is the result of another one of my "recipe combos". I saw an article at realsimpledotcom that featured 10 "oatmeal upgrades". I like oatmeal & 2 of their recipes got my attention, so I stayed in "twissis mode" & combined them to form "Breakfast in a Bowl" w/2 finishing touch options. Check those options by reading my notes at the end of the Prep Steps. Make your choice & then ENJOY!"

Step by Step Method

Step 1

Make 1 serving of quick-cooking or old-fashioned rolled oats per pkg directions & pour into the bottom of a wide bowl.

Step 2

Fry 1 egg per your preferences & set it on the left side of the bowl.

Step 3

Crisp cook 1 thick slice of bacon, break in half & set to the right of the fried egg.

Step 4

Place the avocado slices to the right of the bacon, so from left-to-right you will have your egg, the bacon & the avocado slices lined up.

FINISHING OPTION #1: Top the avocado slices w/2 tbsp salsa


FINISHING OPTION #2: Drizzle 1 tbsp Maple Syrup over the bacon & avocado slices (My choice - I love oatmeal & salsa, but not sure I'd love them together)

What a yummy breakfast treat! It was pretty healthy, too, considering that I actually limited myself to that 1 slice of bacon. I used the pure maple syrup option and it was yummy with the bacon. I bet the salsa option would be equally as good! Thank you for a fun twist to my breakfast on this New Year's Day!
