Ingredients

4 cups frozen shredded hash brown potatoes

1 cup shredded Monterey Jack and Cheddar cheese

1 cup diced fully cooked ham

1/2 cup chopped green bell pepper

1/4 to 1/2 cup sliced green onions or yellow onion

6 eggs, beaten

1 (12 ounce) can evaporated milk, (reg., skim, or non-fat)

1/4 teaspoon pepper

1/2 teaspoon salt

How To Make This Recipe

Preheat oven to 350 degrees.

Grease a 2 quart glass baking dish.
Step

Arrange potatoes evenly in bottom of dish and sprinkle the cheese, ham, green pepper and green onion over potatoes.

In a bowl whisk together the eggs, evaporated milk, pepper and salt; mix well.

Pour egg mixture over potato mixture.
Step

Baked uncovered in a 350 degree oven for 55-60 minutes or until center appears set. Let stand 5 minutes before serving.
