"I love Grissini and especially love these when I have the time to make them. Served with soup these are wonderful. This is from a very old Italian cookbook so I have listed Metric and Imperial measurements, as per the book. Makes 700 grams"

Step by Step Method

Step 1

Sift 350 gr /12 oz/3 cups of the flour into a large bowl keeping the remainder of the flour for kneading the dough later on. Add the prepared yeast (according to directions on yeast packet), salt, 2-3 tablespoons of oil and the milk. Knead energetically for 10 minutes until smooth and elastic.

Step 2

Put into a warm place to rise for 1 1/2 hours.

Step 3

Divide the dough into pieces and roll into long thin sticks with floured hands. Cut the sticks into 25 cm /10 inch lengths. Put on an lightly oiled baking tray and put into a hot oven until crisp and golden; about 15 minutes.

These are awesome! I'm NOT a skilled baker. I try and I try and nothing ever really turns out... but these DID! I made two batches, on the second one I flipped them over about half-way through the bake time to get better color. They were delicious both ways. I used pretzel salt to season them and they were fantastic with the stew we had for lunch. The kids thought they tasted like a saltine cracker and a pretzel had a bread stick baby... and I agree with them. I will definitely make these again. They smell so good while they're baking, too. I used parchment paper because I didn't know if these would stick to a baking sheet, and I sprinkled it with semolina flour to make sure they didn't stick. Like I said, I'm not a great baker and my baked goods tend to stick to things. Thanks for a great recipe! Very good and delicious bread sticks! We made about 24 -- but ours are a bit on the fat side. Thanks for sharing!
