Braised Steak Eszterhazy (Hungarian Style)

Step by Step Method
Step 1
Pound steaks, season with salt and pepper.
Step 2
Heat butter over medium/high in a skillet and saute steaks quickly to brown on both sides( about 2 minutes per side)- remove steaks and set aside.
Step 3
To the skillet, add onions, carrots and celery - saute while stirring for about 5 minutes.
Step 4
Add the paprika and flour, blend well and add the hot broth, stir constantly until smooth.
Step 5
Add the lemon rind, cover the pan and simmer on low for 10 minutes.
Step 6
Add the steaks to the pan, cover and simmer until the steaks are tender ( about 1 hour).
Step 7
Remove the steaks and set aside, strain the sauce/vegetables and return to the pan, then blend in the sour cream.
Step 8
Return the steaks to the pan and heat through, add the parsley and serve.
