Step by Step Method
Step 1
In a large pot, combine blueberries, 1/3 cup sugar, lemon juice and water.
Step 2
Bring to a boil, stirring constantly; reduce heat and simmer for 5 minutes.
Step 3
In a large bowl, cream butter and sugar.
Step 4
Beat in egg and vanilla.
Step 5
In another bowl, mix together flour, baking powder and salt, then add to butter mixture and alternately with milk.
Step 6
Pour hot blueberry mixture into a buttered 1 ½ quart baking dish.
Step 7
Spoon batter on top of berries.
Step 8
Bake in 375F oven about 30 minutes.
Step 9
Serve warm with ice cream.
