Step by Step Method

Step 1

To make the crust: sift the dry ingredients together (flour-baking powder)in a mixing bowl. Using two knives or a pastry blender mix the butter into the flour mixture until the mixture resembles fine crumbs. With your hands press the mixture into a dough and then roll out dough into a rectangle large enough to fit a 12 x 16 inch baking sheet (the kind with sides or use a roasting pan), reserving 1/2 cup of the dough to use as a topping. Place crust in pan, patching if needed.

Step 2

With your fingers, form a ridge around the edge of the dough, so filling will not spill onto floor of oven.

Step 3

To prepare filling: in a mixing bowl combine blueberries with the remainder of the ingredients (sugar - salt) and spread filling over dough.

Step 4

Roll out reserved dough and roll out into a rectangle and cut into strips and place in a lattice pattern over blueberry filling -- or just crumble the remaining dough over the filling (this is what we usually do). Sprinkle with additional sugar if desired as bars are not very sweet.

Step 5

Bake in preheated 375 degree F oven for 25-30 minutes.

Step 6

Cut into squares to serve.

Hubby said this was a very tasty bar!! But I did have to make a few changes. After rolling out the dough into a 12 by 16 inch rectangle as instructed in recipe directions and laying it on the baking sheet there was barely enough blueberries to cover the crust so I just tossed over another 2 cups of blueberries. It was cooked and edges starting to brown after 15 minutes so perhaps the size of the baking sheet recommended is incorrect. I had over 24 2 inch square bars.
