"A tasty dish all by itself, or used as a side. I usually use long grain brown rice which takes approx. 40-45 minutes to cook, or long grain white rice, which takes approx 20-25 minutes. If you use instant rice or other kinds, you will have to adjust the amount of liquid and cooking time accordingly to manufacture’s directions. This recipe can easily be cut in half or doubled."

Step by Step Method

Step 1

In a medium stockpot, heat the oil on medium heat.

Step 2

Add the onion, pepper, and garlic and sauté for 5 minutes.

Step 3

Add the broth and salt and bring to a boil; add the rice, cumin,and cayenne pepper; lower heat to medium low, and cover the pot with a lid.

Step 4

Cook until rice is done, about 40-45 minutes.

Step 5

Add in the beans and parsley the last 5 minutes just to heat through.
