"I used to make this on the stove over very low heat, but since I got a crockpot, I use that. Meat should be falling-apart tender. This is spicy and kind of sweet, and tastes good served over white or brown rice. Salt and pepper are to taste--I'm just guessing the exact amounts because the site rules require a measure."

Step by Step Method
Step 1
Season the beef with salt and pepper.
Step 2
Place butter in the bottom of a large crockpot
Step 3
Add the meat and turn to coat with butter.
Step 4
Arrange the onions over the meat.
Step 5
Mix the tomato paste through the garlic, and pour over the meat and onions, but do not stir.
Step 6
Add the bay leaf through the raisins; do not stir.
Step 7
Simmer on low 8-10 hours.
Step 8
At serving time, remove the bay leaf, cinnamon stick and cloves and stir the stifado gently to blend.
