Beef & Rice Tortilla Pie
"My daughter made this for dinner one night and it was so good I had to have the recipe. I like to add minced jalapeno during step 2. Feel free to add any toppings that make your taste buds dance. I have used leftover taco makings for this dish."

This is great! And so easy and quick to make. I used a bit more cheese and a bit more meat. I topped with chopped avocados and quartered grape tomatoes, and a spoonful of sour cream. Thanks for sharing! Made for First Time Tag game..
- 1/2 pound ground beef
- 1/4 cup yellow onion (chopped)
- 1 teaspoon minced garlic
- 1 can (10 ounce) enchilada sauce
- 1/2 cup sliced black olives
- 1/2 teaspoon ground cumin
- 1 cup cooked rice
- 5 to 6 1/2 ounces flour tortillas (3-4 flour tortillas, 6 inch)
- 1 cup grated cheddar cheese
- 2 green onions (chopped)
- 1 small tomato (chopped)
- Iceberg lettuce (1/2, shredded)
- Sour cream (optional)
- Guacamole (optional)
What You Will Need
No special items needed.
Preheat oven to 350°.
Saute meat, onion and garlic until meat is cooked.
Drain off liquid and add enchilada sauce, olives and cumin; simmer for 2 minutes.
Add rice; mix well.
In a well oiled 8 inch pie pan spoon a thin layer of rice mixture and cover with a tortilla.
Layer half the remaining rice and half the cheese over tortilla.
Repeat layers of tortilla, rice and cheese.
Top with onion and tomato.
Bake in oven for 20 to 30 minutes or until bubbly.
Serve on a bed of lettuce; garnish with sour cream and guacamole if desired.
