Step 1

Mix first seven ingredients in a large bowl. Add Italian dressing and cilantro. Season with salt & pepper. Toss to coat. Refrigerate for 2 hours.

I'm usually not a big fan of bottled dressing; but, it worked well it this recipe. The freshness of the tomatoes, red peppers and corn offset the bottled dressing. Make sure to use a quality dressing will make all the difference. The spice of the jalapeno was nice with the blandness of beans. I certainly enjoyed it, as did my guests. It is a very nice, easy recipe. Great for parties, potlucks, BBQ's etc. I would travel well, which is always important.

We had a crowd over for a barbecue and this was served with several other dishes. It was a refreshing salad with all the veggies and it tasted great. We loved it and it went over very well with the whole crowd!
